La brecha entre el precio del pollo y el asado se achicó durante julio, lo cual es seguido de cerca por los consumidores, según un informe privado.
Mientras el corte de carne vacuna retrocedió, su principal sustituto, el pollo, experimentó un en ese período.
Si se analizan los cortes más caros, se produjo una caída en el matambre y la nalga, del 1,8%; cuadrada, 1,7%; y bola de lomo, 1,2%.
Al evaluar los de precio intermedio, las principales reducciones se encontraron en tapa de asado, tapa de nalga, asado de tira y paleta.
El análisis del Centro de Economía Política Argentina (CEPA) calculó que en los cortes económicos, la reducción nominal de precios fue superior a las otras categorías analizadas, ya que las principales bajas se dieron en cortes de picada común (-3,9%), falda (-3,3%), carnaza común (-2,4%) y tortuguita
(-1,9%).
“Lo que se observa es una reducción de la brecha entre los precios del asado y el pollo entero, que se había incrementado sensiblemente en los últimos meses”, indicó el estudio.
Argumentó que “se debe al aumento de precios del pollo y la reducción de precios de la carne”.
“Si en junio de 2021 un kilo de asado equivalía a 3,84 kilos de pollo, en julio de 2021 equivale a 3,6 de pollo. El abaratamiento de la carne vacuna respecto del pollo durante julio fue del 4,6%”, puntualizó el reporte.
Por otro lado, en términos interanuales, la variación de precios nominales de la carne llegó a 85,3%, por lo que “se movió muy por encima de la variación de precios del período, de 50,2% aproximadamente, lo cual implica un encarecimiento de los diversos cortes en términos reales”.
“A la cabeza de los aumentos sobresalen cortes de alto consumo popular como el asado (91,1%), vacío (94,2%) y matambre (87,5%)”, precisó el sondeo.
Por su parte, el pollo, incrementó su precio en un 4%, señaló el trabajo.A la hora de analizar la evolución de las variaciones mensuales a lo largo de 2020 y los primeros siete meses de 2021, se observaron “incrementos significativos” de la carne vacuna durante enero (7,6%), marzo (5,6%), abril (9,2%), noviembre
(7,7%) y diciembre (20,2%) del año anterior.
A su vez, se dio un salto en enero, marzo y junio de 2021 (6,3% 7,3% y 7,9% respectivamente). “Cortando con la fuerte dinámica alcista, en julio, los
distintos cortes de carne vacuna mostraron en promedio una caída de 1%”, destacó.
Con relación a los motivos del alza de la carne, el informe aseguró que impactó “el aumento de las exportaciones producto de la mayor demanda por China” y la suba del maíz, “por tratarse de un insumo utilizado para la ganadería y la producción de leche, huevos y pollos, entre otros productos alimenticios de primera necesidad”.
