El precio de la carne vacuna no detuvo su alza a pesar de la restricción a las exportaciones que se implementó por treinta días entre mayo y junio y el mes pasado tuvo un incremento promedio del 7,7%, que en los últimos doce meses alcanzó al 90,3%.
Los datos forman parte del último informe del Instituto de Promoción de la Carne Vacuna Argentina (IPCVA), en el que se destacó que el asado de tira tuvo un aumento del 4,5% en el mes, pero que en la comparación con junio del año pasado encabezó las subas entre todos los cortes con un 101,5% a $701,91 el kilo. El lomo, el corte más caro, tuvo un precio promedio de $987,41 en junio, con un aumento mensual del 8,6% e interanual del 86,6%.
Los aumentos de la carne superaron tanto en junio como en la medición interanual al nivel general de la inflación y también a la del rubro Alimentos y bebidas no alcohólicas, llegándolo a duplicar en algunos casos. Además del asado de tira, otros seis cortes registraron en los últimos doce meses incrementos superiores al 90,3% promedio: la falda (97,6%), la tortuguita (97,3%), el vacío (97%), la cuadrada (95,7%), el osobuco (95,2%) y la tapa de nalga (90,7%).
Para encontrar un producto que haya aumentado por debajo del nivel general de la inflación desde junio del año pasado hay que recurrir a las hamburguesas congeladas, con un alza del 47,3%, distante del resto de los cortes de carne vacuna muestran subas de más del 80%, con la excepción del 78,9% de las hamburguesas caseras.
Los dos principales sustitutos de la carne vacuna, el pollo y el pechito de cerdo, también evidenciaron incrementos interanuales superiores a la inflación, respectivamente del 64,8% y del 63,7%, aunque inferiores al resto de los cortes.
Las subas en la carne vacuna es un motivo de preocupación en los despachos oficiales, que desde fines del año pasado intentan frenar esos aumentos a través de diferentes medidas que, a la luz de los hechos, no consiguieron resultados positivos.
Además de la habilitación de once cortes populares a precios más económicos y otras iniciativas como el Mercado Federal Ambulante, una de las medidas más cuestionadas fue la resolución 75/21 del Ministerio de Agricultura que suspendió por 30 días la exportación “como consecuencia del aumento sostenido del precio de la carne vacuna en el mercado interno”.
La medida rigió del 20 de mayo al 20 de junio, pero sus efectos en los precios internos no fueron los esperados: el mes pasado, la carne vacuna tuvo un aumento promedio del 7,7%, más del doble que el 3,2% que tuvieron en el mismo período tanto la inflación general como el rubro Alimentos y bebidas no alcohólicas. Entre las razones que explican ese incremento y, principalmente, el 90,3% interanual, está en la caída de los niveles de producción, con un 5,48% debajo de los niveles del primer semestre del año pasado.
Para Miguel Schiaritti, presidente de la Cámara de la Industria y Comercio de Carnes y Derivados de la República Argentina (CICCRA), el precio de la carne sigue en niveles altos porque “no hay terneros por las dos últimas sequías durante el 2020 y los que hay se destinan a la recría”.
